LES AMIS BISCOCHERÍA: Un secreto en la zona T


Esta panadería/pastelería es uno de los secretos que guarda la zona T en Bogotá D.C.; ya que no es fácil de ubicar a simple vista y requiere del ojo agudo para encontrarla; incluso tendrá que entrar a una especie de garaje y luego ir a un segundo piso, en el cual ofrecen una exquisita variedad de productos los cuales cambian periódicamente, razón por al cual siempre encontrará algo nuevo si deja ir por una temporada.

Igualmente podrá degustar un buen café (un poco fuerte, pero de buen gusto al paladar), que en mi opinión, es el compañero perfecto en esta clase de aventuras culinarias.

Que más puede encontrar en este lugar (a parte de sus deliciosos productos, que no entraré a detallar): una explosión visual y olfativa que sencillamente lo confundirá... así es!, no sabrá que elegir entre las múltiples opciones de sal y dulce que se encuentran ofrecidas de manera generosa en su mesa principal... aquella que separa el área de servicio de la cocina, permitiendo visualizar todo el movimiento de esta.

Así que si quiere tomarse un café en la tarde o disfrutar un postre al medio día, con una muy buena atención, este es una excelente opción si esta en la zona.

What else can you find in this place (apart from its delicious products, which I will not go into detail): a visual and olfactory explosion that will simply confuse you ... that is it !, you will not know to choose between the multiple options of salt and sweet which are generously offered at their main table ... the one that separates the service area from the kitchen, allowing you to visualize all the movement in this one.

So, if you want to have a coffee in the afternoon or enjoy a dessert at noon, with a very good attention, this is an excellent option if you are in the area.

Donde Comer Empanadas en Bogotá D.C.


Como saben, las empanadas son uno de los platos típicos de la comida vallecaucana, que con los años se convirtieron en uno de sus principales referentes, junto con el sancocho, las marranitas, el aborrajado, el tamal, el cholado, la lulada, el pandebono, entre otras delicias y que ahora por fortuna se encuentra, en general, a lo largo y ancho de Colombia (por fortuna para quienes ya no vivimos en tan maravillosas tierras).

Bogotá, como lo mencionaba anteriormente, no escapa a esta colonización valluna, y este pequeño manjar se puede disfrutar casi en cualquier lugar de la ciudad, desde pequeñas cadenas nacionales que se han encargado en fomentar su consumo bajo un formato estándar, hasta aquellos pequeños locales improvisados en las esquinas mas transitadas de esta agitada ciudad.

Y ante tanta oferta, la pregunta que surge es: ¿Dónde disfrutar de una buena empanada?

Pues bien, no me cabe duda de que hay muchos buenos lugares, pero les quiero recomendar uno que sin lugar a dudas se ha convertido en mi favorito: "Donde el Mono" (sí, un apelativo muy rolo, ya que aquí todos podemos ser "monitos" o "monos" jejeje).

Pero bueno, ¿Qué tiene de especial este sitio?; la respuesta es: las empanadas de este lugar tiene una crocancia maravillosa, fruto de una especial combinación que no mencionaré aquí, pero que es digna de sus pares del Valle; lo segundo que puedo mencionar son sus rellenos, que se pueden disfrutar desde el típico (papa, guiso y carne), hasta opciones como pollo, carne "desmechada o mechada", queso, queso y bocadillo e ingredientes que se pueden adicionar como cábano, jalapeños, maíz; y finalmente tiene una muy buena variedad del mejor amigo de la empanada, que es un picante, aquí también puede degustar de los tradicionales como: cebolla/cilantro y guacamole (estos dos son mis favoritos), hasta variaciones como salsa rosada, bbq, mayonesa, tártara, piña y otras tantas.

La estrella que se roba el show para mí, es la súper mega, una gran empanada, con diferentes ingredientes, que lo llevarán sin duda al paraíso de los sabores (¡mezclela con todo!).

Y como "napa", puede encontrar arepas de huevo, otra delicia del lugar que merece ser probada.

Respecto al lugar, no espere encontrar un lugar bonito o lujoso, eso si normal y bastante concurrido, en un extremo de la ciudad (norte, por lo cual casí que con seguridad tendrá que atravesar la ciudad para degustarlas...pero bien vale la pena que haga el viaje).

As you know, the empanadas are one of the typical dishes of the "Vallecaucana" food, which over the years became one of its main references, along with the "sancocho", "marranitas", "aborrajado", "tamal", "cholado", "lulada", "Pandebono", among other delicacies, and now fortunately is found, in general, throughout Colombia (fortunately for those of us who no longer live in such wonderful lands).

Bogotá, as I mentioned before, does not escape this "valluna" colonization, and this small delicacy can be enjoyed almost anywhere in the city, from small national chains that have been in charge to promote their consumption in a standard format, to those small places improvised in the busiest corners of this bustling city.

And before so much supply, the question that arises is: Where to enjoy a good empanada?

Well, I have no doubt that there are many good places, but I want to recommend one that has undoubtedly become my favorite: "Donde el Mono".

But hey, what's so special about this place ?; The answer is: the empanadas of this place have a wonderful crocancy, fruit of a special combination that I will not mention here, but that is worthy of its pairs of the Valley; The second that I can mention are their fillings, which can be enjoyed from the typical (potato, stew and meat), to options such as chicken, meat "mechada", cheese, cheese and "bocadillo" and ingredients that can be added as radish, Jalapeños, corn; And finally has a very good variety of the best friend of the empanada, which is a spicy, here you can also taste traditional ones like: onion / cilantro and guacamole (these two are my favorites), until variations like pink sauce, bbq, mayonnaise , Tartar, pineapple and many others.

The star that steals the show for me, is the "super mega", a great empanada, with different ingredients, that will surely take you to the paradise of flavors (mix it with everything!).

And as "napa" or extra bonus, you can find "arepa de huevo", another delight of the place that deserves to be tasted.

Regarding the place, do not expect to find a nice or luxurious place, that if normal and quite crowded, at one end of the city (north, so almost that you will surely have to cross the city to taste them ... but well worth it sorry for the trip).

Chelsea: Un buen lugar para tardear y empezar la noche

Gracias a un amigo descubrí las bondades de un buen Gin & Tonic y un excelente lugar para disfrutarlo es el bar Chelsea, ubicado en el piso 11 de la torre 1 del hotel Bioxuri; allí encontrará dos ambientes, uno de los cuales es una terraza que le permitirá disfrutar de una maravillosa vista de una parte de la ciudad.

De jueves a viernes abren a las 5:00 pm y los sábados a partir de las 4:00 pm; así que si se anima a ír temprano podrá observar un atardecer bogotano.

La nota distintiva del lugar es su Tea Tonic, una mezcla de infusiones de te, así como algunos frutos, hierbas y flores; con seguridad encontrará un sabor que deslumbrará su paladar.

El lugar es ideal para compartir de manera relajada con amigos y tener una buena charla; aunque le sugiero que llegue temprano o reserve, ya que el sitio no cuenta con un espacio generoso y la afluencia de clientes es alta.

From Thursday to Friday they open at 5:00 pm and on Saturdays from 4:00 pm; So if you are encouraged to go early you will be able to observe a Bogotá sunset.

The distinctive note of the place is its Tea Tonic, a blend of tea infusions, as well as some fruits, herbs and flowers; You will surely find a flavor that will dazzle your palate.

The place is ideal to share in a relaxed way with friends and have a good chat; Although I suggest you arrive early or reserve, as the site does not have a generous space and the influx of customers is high.

Apoyando la Estandarización de Producto en Juan Valdez

APOYANDO LA ESTANDARIZACIÓN DE PRODUCTO EN JUAN VALDEZ

Hoy asistí a la sesión, convocada por Juan Valdez, la cual tenía como objetivo conocer la percepción de clientes consumidores de sus productos granizados (quienes me conocen de manera cercana, saben que el granizado de café es una de mis bebidas favoritas... no importa si hace frío o calor).

Ellos pretenden lograr la estandarización de sus productos, de tal forma que los consumidores no perciban diferencias entre tiendas, especialmente en aquellas ubicadas en el extranjero (Aruba, Barein, Bolivia, Chile, Costa Rica, Curazao, Ecuador, El Salvador, España, Estados Unidos, Kuwait, Malasia, México, Panamá, Paraguay y Perú); todo un reto considerando las restricciones de insumos y proveedores que se tienen en cada uno de estos mercados.

Por esta razón, algunos clientes pertenecientes al programa "Amigos Juan Valdez", participamos en esta cata especial de productos granizados, donde tuvimos la oportunidad de expresar nuestras opiniones acerca de los mismos; opiniones que serán tenidas en cuenta al momento de realizar las formulaciones y recetas.

SUPPORTING PRODUCT STANDARDIZATION IN JUAN VALDEZ

En diciembre del año 2016, cuando regresé al país, me encontré con la maravillosa noticia de la apertura de Factor Cacao, la tienda de chocolates del chef mexicano José Ramón Castillo; desde entonces tenía entre mis pendientes de expedición gastronómica pasar por su tienda y probar sus propuestas.

Para quienes no conozcan muy bien al chef José Ramón, les cuento que él es uno de los mejores chocolateros de la Latinoamérica y del mundo; para ilustrarlos un poco más estos son algunos de sus logros:

  • La Secretaría de Agricultura "SAGARPA" lo reconoce como Máximo Exponente del Cacao Mexicano y Maestro Chocolatero.
  • Premio absoluto en el Campeonato de Cocina de Barcelona y ganador del título de "Joven Cocinero de Cataluña".
  • Incluido por la editorial ABM Media en "El libro de los 21 Chefs".
  • La editorial Larousse lo ubica como uno de los mejores chefs de México ("Top Chefs de México").
  • Jurado del programa Master Chef en México y Colombia.
  • Fundador del centro de formación de chocolateros "Aula Que Bo!"; reconocida por la guía internacional Le Guide de Croqueurs de Chocolat como una de las mejores del mundo.
  • La Universidad Cergy Pontoise, en Francia, le otorgó el reconocimiento como Maestro Chocolatero de las Américas.
  • Su libro Kakaw, fue reconocido en los Gourmand World Cookbook Awards de París con el premio especial World Inmaterial Heritage, en el año 2010.
  • La revista Dessert Profesional lo incluyo en el año 2010 en su lista Top 10 Chocolatiers of North America.
Bueno y ya que estamos contextualizados con el chef, ¡vamos a la experiencia!

Lo primero que pueden encontrar es un espacio dominado por el color blanco, que contrasta de manera majestuosa con los brillantes colores que envuelven los chocolates... así los chocolates... esto es lo que pueden degustar:

  • Sin relleno, blanco u oscuro, con composiciones a partir del 80%.
  • Con relleno, oh y aquí pueden dejarse llevar por el delirio... que pueden encontrar dentro:
    • Aguardiente: ¡Esto es Colombia!... gracias chef.
    • Arequipe.
    • Banano.
    • Bocadillo.
    • Café tintico.
    • Capuccino.
    • Cocada.
    • Feijoa.
    • Guayaba Agria.
    • La Calera: Querían un sabor más Bogotano... ¡ahí lo tienen!
    • Lulo.
    • Mandarina.
    • Mango con chile.
    • Maracuyá.
    • Ron Antioqueño: ¡Mi trago preferido!... y esta combinación déjeme decirles... es wow!
Como pueden observar, toda una oda a los sabores colombianos... a nuestros licores y bebidas, frutas exóticas, dulces y por supuesto el café.
  • ¡También pueden encontrar el chocolate con formas de animales, juegos de la infancia! (Si un yoyo, una pirinola - en chocolate negro - y canicas - chocolate blanco) y algunas formas abstractas.
  • Macarrones.
  • Trufas.
  • Mouses con presentaciones sofisticadas y sobrias hasta combinaciones electrizantes de colores con rellenos de ensueño.
  • ¡Y finalmente tortas con colores que recuerdan las imágenes de galaxias!
Para finalizar mis comentarios, debo decir que la atención que encontré fue excelente, la vendedora que me atendió se tomó todo el tiempo para explicarme en qué consistía cada producto y la cajera estuvo siempre presta a sugerirme sabores cuando tuve dudas al elegir... esto sin duda complementó mi experiencia de una manera muy positiva.

Conclusión queridos lectores... vayan y disfruten de la sinfonía de sabores y colores que ofrece el chocolate en manos del chef Castillo.

PD. ¡Ya estoy inscrito en la lista de clientes... y deseando probar nuevos sabores!!!... no dejen de ir!!! o comprar alguna caja de 6, 10 o 20 unidades... quedaran muy bien si los regalan... pero mejor si los disfrutan sin compartir!!!! jajaja

  • You can also find chocolate with animal shapes, childhood games! (If a yoyo, a pirinola - in black chocolate - and marbles - white chocolate) and some abstract forms.
  • Macaroni.
  • Truffles.
  • Mouses with sophisticated presentations and sober up to electrifying combinations of colors with dream fillings.
  • And finally cakes with colors that recall the images of galaxies!

To finish my comments, I must say that the attention I found was excellent, the saleswoman who took care of me took all the time to explain what each product consisted of and the cashier was always willing to suggest flavors when I had doubts when choosing ... this It certainly complemented my experience in a very positive way.

Conclusion dear readers ... go and enjoy the symphony of flavors and colors that chocolate offers in the hands of Chef Castillo.

P.S. I am already registered in the list of clients ... and wanting to try new flavors !!! ... do not stop going !!! Or buy a box of 6, 10 or 20 units ... would look great if they give them ... but better if they enjoy them without sharing !!!! Hahaha

¡De vuelta al ruedo! / Return again!

Buenos días queridos lectores:

¡Parece que marzo es uno de esos meses especiales para retomar cosas!, en mi caso, significa volver a mi blog, del cual me había apartado desde julio del año pasado... casi 8 meses de ausencia y un 2016 marcado por pocas entradas... ¡aunque las expediciones nunca se detuvieron!

Es hora de volver y conectarme con eso que tanto me gusta, que es compartir con ustedes todos esos buenos lugares donde se puede disfrutar de una buena comida... algunas de mis próximas entradas serán experiencias recientes, otras no tanto, pero igual merecen ser compartidas, porque se han quedado en mi mente y en mi paladar.

Galápagos... que buena hamburguesa / Galapagos... a good hamburguer

En el mercado de las hamburguesas hay muchas opciones, pero pocas las que se salen del estándar y son realmente buenas.. este último caso es el de Galápagos, que ofrece sencillamente una opción deliciosa y una relación precio/calidad/cantidad absolutamente equilibrada y ganadora.

Adicionalmente, como queda a las afueras de Bogotá D.C. (Colombia), es una excusa perfecta para salir de paseo el fin de semana.

In the market for burguers there are many options, but few that out the standar and are really good... the latter case is the Galapagos, which simply offers a delicious choice and a relation price/quality/quantity absolutely balanced and winner.

In adition, as it is on the outskirts of Bogotá D.C. (Colombia), is a perfect excuse to walk out of the weekend.
